• 1 cup textured soy protein
  • 1 large potato (250g)
  • 1/3 cup of flour (wheat, rice, oats, etc)
  • 1/2 chopped onion
  • 2 minced garlic cloves
  • Vegetable milk (for breading)
  • Breadcrumbs (for breading)
  • Spices to taste (recommended: soy sauce, smoked paprika, and chimicuhrri)


  • Step 1: Boil soy protein with vinegar for 15 minutes, drain, rinse and squeeze well to remove all water

  • Step 2: Cook the potato until soft and mash it to make a puree

  • Step 3: Saute the onion and garlic in a skillet until golden

  • Step 4: Add the soybeans and seasonings to the frying pan and let it cook for a few minutes

  • Step 5: Transfer to a bowl and add the mashed potato and flour, mix everything

  • Step 6: Mold the croquettes, dip them in vegetable milk, then in breadcrumbs and fry them in hot oil or bake them in an airfryer for about 15 minutes


  • 1: If you are going to bake the croquettes in the airfryer, add a little olive oil on top of them so they don't dry out

  • 2: You can freeze the croquettes before frying or bake them to store and consume later
