Ingredients
- 1 chopped red onion
- 2 garlic cloves
- 300 grams of sliced mushrooms
- 1 tablespoon chopped parsley
- 1 tsp smoked paprika
- 120 ml of vegetable broth
- 1 tablespoon of soy sauce
- 400ml coconut milk
- Optional: Black pepper to taste
Steps
Step 1: Saute the onion in a pan with a little water over medium/high heat until soft
Step 2: Add the mushrooms and garlic and add more water if needed
Step 3: Cook for 6 minutes until the mushrooms are almost tender
Step 4: Add parsley until fragrant
Step 5: Pour in the vegetable stock and simmer over low heat for about 5 minutes or until thickened
Step 6: Remove the pan from the heat and add the coconut milk until creamy, season with pepper and garnish with chopped parsley

1: You can serve it with mashed potatoes, pasta, rice or quinoa
