Ingredients

  • 1 chopped red onion
  • 2 garlic cloves
  • 300 grams of sliced mushrooms
  • 1 tablespoon chopped parsley
  • 1 tsp smoked paprika
  • 120 ml of vegetable broth
  • 1 tablespoon of soy sauce
  • 400ml coconut milk
  • Optional: Black pepper to taste

Steps

  • Step 1: Saute the onion in a pan with a little water over medium/high heat until soft

  • Step 2: Add the mushrooms and garlic and add more water if needed

  • Step 3: Cook for 6 minutes until the mushrooms are almost tender

  • Step 4: Add parsley until fragrant

  • Step 5: Pour in the vegetable stock and simmer over low heat for about 5 minutes or until thickened

  • Step 6: Remove the pan from the heat and add the coconut milk until creamy, season with pepper and garnish with chopped parsley

  • 1: You can serve it with mashed potatoes, pasta, rice or quinoa
