Ingredients
- 1 kg of potatoes cooked in salted water
- 1 tbsp coconut oil (or vegan vegetable cream)
- 1 large chopped onion
- 1 stalk of chopped leek
- 1 cup of mushrooms, can be shimeji
- 1 tsp paprika powder, smokeable
- 1 tbsp soy or tamari sauce
- 2 tbsp chopped chives
- 2 tablespoons of vegetable oil for the stir-fry
- 1/4 cup of panko flour to coat the pie
- Salt and pepper to taste
Steps
Step 1: Peel, cut into cubes and cook the potatoes in water and salt until they are very soft to the point of preparing a puree
Step 2: While the potatoes are cooking, prepare the mushroom stew. Place the mushrooms in a sieve to drain while you prepare the rest of the ingredients for the stew
Step 3: Cut the onion into small cubes and slice the leek. Chop the green onion and set aside
Step 4: In a medium frying pan, heat the two tablespoons of oil and add the paprika powder, allowing it to brown quickly, taking care not to burn it
Step 5: Add the onion and fry until golden brown. Season with a pinch of salt
Step 6: When the onion is golden, add the leek and let it sauté together for another two minutes over low heat
Step 7: Add the mushrooms to the stew, increase the heat and let it cook, stirring occasionally
Step 8: Add the soy or tamari sauce, adjust the seasoning and add whatever else you think is necessary to season the stew. Let it simmer over low heat until reduced and dry. Turn off the heat and set aside
Step 9: Drain the potatoes and prepare the puree. Add a tablespoon of vegetable cream or coconut oil without flavor
Step 10: Smash the potatoes well until you get a very creamy puree. When the puree is very smooth, it's ready to assemble the pie
Step 11: Grease a refractory dish, preferably round, to assemble the pie
Step 12: Forge the plate with half the mashed potatoes
Step 13: Place the mushroom sauce over the mashed potatoes spreading well
Step 14: Cover with the rest of the mashed potatoes and spread well. Cover with the seasoned panko flour. Season the panko flour with a pinch of salt and black pepper. Mix everything and spread over the last layer of mashed potatoes
Step 15: Take it to the preheated oven at 180 degrees celsius to bake for 20 minutes or until it is very golden on top. The oven time is just to brown and leave the top layer very crispy, because all the ingredients have already been previously cooked
Step 16: Decorate with chopped green onions to your liking. Serve hot with a salad or whatever you prefer
Tips
1: If you don't have mushrooms, fill your pie with a delicious and colorful vegetable stir-fry using what's in your fridge
2: If you are going to use shimeji, wash it well and separate the branches, keeping them whole. They wither when sautéed
3: Prepare all the ingredients you'll need to make your job easier. Leave the puree in the pan and the sauté in the skillet to keep warm
