Ingredients
- 2 tablespoons flax seeds
- 6 tablespoons of water
- 4 tablespoons of demerara or granulated sugar (for sprinkling)
- 1 teaspoon ground cinnamon (for sprinkling)
- 3 medium loaves of French bread, finely chopped (about 200g)
- 1/3 cup (of tea) of chopped Brazil nuts
- 1/3 cup (tea) of raisins
- 2 small sliced bananas
- 2 cups (of tea) of almond milk
- 2 tablespoons of demerara or granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
Steps
Step 1: In a blender, place the flaxseeds and blend until finely ground
Step 2: Add the 6 tablespoons of water and beat again to mix and let it soak for 15 minutes
Step 3: Grease a non-stick baking sheet with vegetable oil (e.g. coconut oil)
Step 4: Mix the sugar with the cinnamon powder in a small bowl and sprinkle half over the baking sheet
Step 5: Chop three medium loaves of French bread into small pieces and place on baking sheet
Step 6: Add Brazil nuts, raisins and sliced bananas
Step 7: Put the almond milk, 2 spoons of demerara sugar, the vanilla essence and cornstarch in the blender and beat well
Step 8: Place the mixture above in the baking dish, adjust it with a spoon and sprinkle the rest of the sugar with cinnamon
Step 9: Preheat the oven to 220 degrees celsius
Step 10: Take to bake for about 40 minutes or until a golden crust forms
Tips
1: You can serve it with vegan ice cream
2: There are vegan French breads, but it's good to check the composition at your bakery
3: It is not recommended to use sliced bread, as it can fall apart
4: You can use other vegetable milks instead of almond milk
5: In place of Brazil nuts, you can use cashew nuts or walnuts
