Ingredients

  • 2 cups pre-cooked chickpeas
  • 1 cup of fresh mushrooms
  • 1/2 cup chopped leeks
  • 2 large garlic cloves, minced
  • 2 large, very ripe tomatoes, chopped
  • 1/2 chopped red pepper
  • 1 large chopped onion
  • Chopped parsley and chives
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste
  • 1 teaspoon of paprika
  • White oat sauce

Steps

  • Step 1: In a pan quickly heat the oil and place the garlic to fry, taking care not to let it burn. Lower the heat as soon as you add the garlic

  • Step 2: Then add the onion and fry it with the garlic a little longer. Season with salt, lower the heat and then add the leek

  • Step 3: Add chopped tomatoes and red pepper and paprika, if using. Mix everything, cover the pan and let the sauce simmer for about 3 minutes

  • Step 4: Then add the pre-cooked and drained chickpeas. Let it cook with the sauce for about 2 minutes

  • Step 5: Put the mushrooms cut into thick slices. Let it cook for no more than 1 minute over low heat and with the pan covered

  • Step 6: Mix the white oat sauce, cook for about 3 minutes over low heat for the flavors to combine. Check the salt, add the parsley and chives, cover the pan and turn off the heat

Tips

  • 1: Serve with rice and a salad of your choice

  • 2: This amount serves 6 people very well depending on the side dishes
